Cowboy Caviar
A quick, vibrant salsa that goes with almost anything. Simple to prepare – and perfect for putting our new Classic Ikon Asian Utility Knife to the test. With its slightly wider blade, you’ll dice peppers, onions and tomatoes like a pro. The result? A fresh, versatile salsa that pairs perfectly with tortilla chips, grilled dishes, tacos – or simply enjoyed on its own as a light summer dish.
Ingredients
For the salsa:
- 1 green pepper, finely diced
- 1 small red onion, finely chopped
- 1–2 tomatoes or a handful of cherry tomatoes, cut into small pieces
- 1 tin black beans, rinsed and drained
- 1 tin sweetcorn, drained
- A handful of fresh coriander, chopped
Optional – to taste:
- 1 small jalapeño, finely chopped (for heat)
- ½ avocado
- 1–2 spring onions
For the dressing:
- 4 tbsp olive oil
- 3 tbsp lime juice (or lemon juice)
- 1 tsp honey or maple syrup
- 1 tsp Dijon mustard
- Salt & black pepper
Optional:
- ½ tsp cumin or chilli powder
Directions

Chop and combine: Prepare the vegetables and place them in a large bowl with the beans and sweetcorn.

Prepare the dressing: Mix all dressing ingredients in a small bowl until well combined.

Season to taste: Adjust seasoning as preferred.
