Product Details

The WÜSTHOF Two-Stage Hand-Held Knife Sharpener is safe and easy to use.

  • Place the sharpener on a flat work surface and hold the E-Z grip handle with one hand and the knife handle with the other. Insert the knife blade fully into the slot at a 90-degree angle to the sharpener and pull back a few times to sharpen.
  • After setting the knife's edge with the carbide side, use the unit's ceramic side to nicely finish the edge.
  • This sharpener is designed to sharpen a knife at 14 degrees per side.

  • Hand-held pull-through sharpeners will wear down with regular use.  Steel dust may settle between either of the sharpening rods.  Use a small sift brush to dry brush away any remnants.

What sets WÜSTHOF knives apart from other brands?

WÜSTHOF is one of the few brands permitted to use the label “Made in Solingen” on our knives rather than the less restricted “Made in Germany.” Solingen, Germany is the steel manufacturing capital of the world and, as such, needed to take precautionary measures against fraudulent products bearing the prestigious name, “Solingen.” In 1938, Solingen became the only city in the world whose name is a registered trademark. To bear the name Solingen, all key manufacturing stages must have been processed and finished within Solingen, and the product must meet strict quality standards. This means that even cutlery manufactured entirely within Solingen’s town boundary may not be entitled to bear the name Solingen if it does not meet these required quality standards.

Some of our competitors use the label “Made in Germany,” which does not carry the same significance. We have the honor of labeling our products “Made in Solingen.”

What is Precision Edge Technology (PEtec)

WÜSTHOF’s proprietary state-of-the-art technology incorporates a computer-controlled method for putting the edge on forged knives. Using laser-guided precision, our knives are 20% sharper with twice the edge retention. All forged knives are manufactured using PEtec.

What do the numbers printed on my blade mean?

The number etched on your blade indicates the year it was made — just add “20” in front of it.

In some cases, you might see a second number, which shows the blade length in centimeters.

There is no item number printed on the blade.

Examples:

• “25” means the blade was made in 2025.

• “22 / 20” means the blade was made in 2022 and is 20 cm long.

What is the difference between forged and laser-cut stamped knives?

Forged knives go through over 40 steps in our factory to create the top quality blades WÜSTHOF has to offer. Forged knives include a bolster, which helps to balance the knife. Laser-cut stamped blades go through 14 steps in our factory, and are more economically priced. They are lighter in weight, and do not have a bolster.

What are the most important knives to start a set?

The most important knife in any kitchen is the chef’s knife, and after that, it depends on your own personal preferences when cooking.

How do I keep my knives sharp?

WÜSTHOF knives can be honed and sharpened using a hand-held sharpener, an electric sharpener, a sharpening or honing steel, or a whetstone. We recommend using the same brand sharpener as your knife collection, to ensure that the material used is the correct hardness for the steel on your knives. Our sharpening angle for standard blades is 14˚ per side, and for Asian-style blades (Santokus, Nakiris) is 10˚ per side. We offer a variety of sharpening products with pre-set angles.

Sharpener still in question

"To date, I’m not have any success keeping my new Wusthof 8” classic chef’s knife sharp at all. If anything, It feels like it had dulled it. I have been a sculptor/carver and have other sharping devices that keep my chisels razor sharp along with a power wet wheel sharpener/honer for my knives. I thought this hand tool would be more convenient and close to where I prep for cooking. I even looked up video tutorials ! I am no where close to how sharp the knife should be as illustrated, slicing paper etc. (which I can do with my chisels btw). I haven’t giving up yet and will keep trying the Wusthof hand held tool."

"I've had my Wusthof chef's knife for about 30 years and never sharpened it or properly honed it. Ran it through the sharpener side of the 2 stage once and the honing side 4-5 times and now the knife is sharp. Cut through an eggplant with skin. Couldn't do that before. Does your manual sharpener do both angles 15 and 20 degree angles?
Our 2-stage handheld sharpener is meant for our standard knives which have a 14.5-degree angle. You can also consider our Universal Handheld Sharpener which provides slots for our standard knives as well as our Asian-style knives. We no longer sell a sharpener with a 20-degree angle. Can the 2-stage sharpener also be used for serated edges?

Can I use a Wusthof Two-Stage Hand-Held Knife Sharpener on a ceramic blade if I use the fine sharpener?
It's always best to contact the manufacturer of the knife to verify how best to sharpen a ceramic knife. Since we don't manufacture ceramic blades, we can't offer a recommendation on how best to sharpen them. Whether our handheld sharpener would work should be determined by the specific manufacturer of your knife.
I have this sharpener. I can see that both the course and the fine side have to sharpening edges at an angle forming a v. My question is when I slide when I pull the blade through at a 90° angle to the sharpener should I be leaning it against first one side of that angle then the other side of the angle as I pull it through so it sharpens each side of the blade at the same angle evenly on each side or do I just try to estimate the center between the two angled sides and then pull it through? This second choice does not seem to be the right way because as I pull it through the angle between the upright blade and either angled side will never be exactly the same as I pull it through in May in fact change on each pull so will not be a symmetrically perfect grind on each side so it will not be creating a perfect grind
Jim, Great question. It is very important to not lean your knife to the right or left as you draw it through our handheld sharpener slots. This will put a very uneven edge on your blade. It will create too high of an edge and will ruin your knife. You want to keep your knife perpendicular to the counter as you draw it through the slot. You want to use only the weight of the blade when drawing it through the sharpener. Do not put too much pressure on the knife. You will want to use the coarse slot about once every year or two to sharpen your knives. You will hone your knives regularly using either a honing steel or the fine slot only of the handheld sharpener.
